Tuscan Style Pasta Salad

As summer rolls around, it's the time to eat salad. I find pasta amazing, but often a little bit heavy for a dinner in this weather, therefore I came up with a simple pasta salad. This is zesty, creamy, salty and fresh, and insanely easy to make.


Prep time: 5 mins - Cook Time: 15 minutes - Serves: 1



Ingredients: -75g fusilli pasta (75g per person)

-Kale, washed and drained

-2 cloves Garlic

-2 tablespoons butter

-Red chilli flakes

-Salt and Pepper

-3 tablespoons double cream

-Parmesan Cheese

-1 Lemon


Method:

1) Boil water in a saucepan, add a generous amount of salt. Add the pasta, and stir.

2) In a pan on the side, melt the butter over medium heat. Add in the chilli flakes, Slice the garlic into thin slices, but don't finely dice. Add the garlic, and fry until lightly golden. 3) Add in the kale, and a squeeze of half a lemon. Using a cup, carefully gather some of the pasta water and pour this over the kale. This just adds a touch of liquid for the kale to cook with.

4) Drain the pasta, but keep some of the pasta water reserved. The starchy water will help build structure to the sauce. Add the pasta into the pan and stir.

5) Pour in some more pasta water and the double cream. Add another tablespoon of butter and stir together. Grate in some of the parmesan and season with lemon zest, cracked black pepper and salt (if needed).

6) Serve hot or cold with a squeeze of lemon over the top for added freshness and a touch more grated parmesan.
